I’ll be straight here- I’m a sweet over savoury kind of gal in the mornings. Although I’m often tempted by a perfectly poached egg or a fancy smashing of a ripe and ready avocado, nothing quite has me at hello like the stickiness of syrupy pancakes or the crunch of a nutty granola (was that sentence Nigella enough, or)? Anyway! After playing around a little in the kitchen and finally putting to good use some of my favourite recipe books, I thought I’d share a handful of my favourite summer breakfast recipes (because you’re worth it)!
Izy Hossack’s 10 Minute Granola:
Izy from the beautiful blog Top with Cinnamon (who I interviewed here), is by far one of my favourite cooks, writers and foodie women. Not only has she a magical eye for flavours and sweet combinations, but all of her recipes are achievable, delicious and easy to follow. So, after a couple of unsuccessful homemade granola attempts, I discovered this bad boy from her- and although I did throw in a couple of my own additions (the charm is that many of her recipes are easily customisable)- and this was a serious 10/10.
You will need:
– 190g rolled oats
– 35g roughly chopped almonds
– 2 tbsp coconut oil (or butter)
– 3 tbsp honey, agave or maple syrup
– (I also added in chopped hazelnuts and cinnamon, and know mixed seeds would be delicious too)!
1. Dry toast the oats and almonds (along with any other additions) in a frying pan over a medium heat for 5 minutes- stirring frequently to stop any burning!
2. Make a hole in the middle and add the coconut oil and honey (what I opted for)- continue to stir for a further 5 minutes until everything is well coated.
3. Remove from the heat and allow to cool- this will store for 2 weeks (and is delicious served with natural yoghurt and fresh fruit).
My French Toasted Banana Bread:
If ever there was a way of doing a ‘treat’ breakfast, I’m pretty sure this would be it. This fuses two of my favourite things in life (French toast and banana bread)- and served with Greek yoghurt and some syrup (I used date syrup for this which was great)- makes for a seriously indulgent (and in my mind, half healthy, lol) breakfast! I also have a traditional French toast recipe here, if you’re not feeling the ‘nanas!
You will need:
– Banana bread recipe here (ingredient list in description)
– 1 egg
– 4 tbsp milk
– Knob of butter
– Banana/Syrup/Yoghurt to serve
1. Adding your egg into your milk mixture whisk everything until combined. Soak a slice of your banana bread into the mixture for a couple of minutes, making sure everything is well coated!
2. Pop your knob of butter into a frying pan, and heat on a medium heat until melted. Add in your slice of banana bread, and cook each side for a couple of minutes, or until golden brown- flipping half way through to do each side!
3. Once browned, serve with your choice of yoghurt, syrup, banana or even…bacon…Enjoy!
The Good Life Berry Good Smoothie:
This is definitely the most ‘healthy’ of the bunch (and definitely packs in the most of your 5 a day)- and if I’m being honest, it’s one of the few smoothies that I really love. The Good Life Eatery cook book packs some seriously delicious smoothie recipes, and this Berry Good one was a good place to start and one I really wanted to share- again, like Izy’s this is totally customisable and you could add in protein/different berries too!
You will need:
– 50g blueberries
– 50g blackberries
– 1 banana
– 2 tbsp almond butter
– 2 tbsp honey
– 4 ice cubes
– 250ml almond milk
– Sprinkling granola to serve
1. Throw all of your ingredients into a blender and blend for a couple of minutes (or until everything is combined) and serve! Sprinkle a little granola on top and enjoy- super simple!
