I thought I’d share another one of my go-to recipes today, as it’s super duper easy- and once you get to know it, takes literally about half an hour, which is good when you’re tight for time and looking for something good and healthy to eat!
I was told this by my boss at an Italian restaurant I work for (after being a slightly demanding pest), and although it usually includes some sort of fish (usually tuna or anchovies) I have adapted it simply using veg and herbs, which is more suited to my taste- but I’d love to hear if any of you tried it differently!
(p.s sorry this recipe looks visually the same as my last, it’s not i promise!)
You Will Need:
– 1 x Medium Red Onion
– 1 x Jar of Capers (available in supermarkets, I usually use about half the jar as they’re quite salty!)
– 2 x Garlic cloves
– 1 x box (is that what they come in?) of Olives
– 2 x dried chillies (or fresh ones if you like it hot!)
– 1 x selection or packet of herbs
– 2 x tinned tomatoes
-(Optional- tomato purée to thicken the sauce)
– Some salt & pepper for seasoning
– Garlic Bread if desired
1. Chop your onions and crush your garlic (if you don’t have a garlic crusher chop your garlic into small pieces, although beware garlic causes smelly hands eww).
2. Add the onion, garlic and your chillies to a frying pan (olive oil optional) and leave to fry for about 5 minutes.
3. Add your capers and olives, and continue to fry until your onions are soft and slightly golden.
4. Add your two tins of tomatoes, and add purée if mixture is a bit ‘runny’ (clearly, I do not talk chef)
5. Whilst this is all being done, put some water in a saucepan to boil, ready to add your spaghetti/and or put your garlic bread in the oven
6. Add your herbs, and seasoning to your mixture, and leave on a low heat to simmer whilst your spaghetti cooks (follow packaging on spaghetti as necessary).
7. Once spaghetti is ready, drain away the excess water and serve up. Add your sauce to your spaghetti- and enjoy! Bon Appetit!
